Different nuts contain variable amounts of oils and fats with very different fatty acid compositions.

Once de-shelled, their natural protection is gone and certain nuts with a high content of polyunsaturated oils – such as walnuts and pecans – can turn rancid very quickly if not properly stored. Macadamia nuts contain up to 60% oil and can turn rancid in just a few days if no special protective measures are taken.

On the other hand, hazelnuts and almonds are relatively stable, but once broken and sliced will also turn rancid if not stored in airtight packaging.
