Recommended antioxidants
Chewing gum is composed of a water insoluble gum base (15-30%) and edible water-soluble components such as sugar, acids, etc. Two components require protection against oxidation: the flavor/aroma components and the ester gums, which give elasticity and plasticity to the gum base. The oxidation products are bitter and, although flavors and sweeteners may hide that, it can be detected by the consumer after the disappearance of the aroma and sweet taste. The use of antioxidants is the most economical way to avoid the formation of bitterness in chewing gums. |
