Mayonnaises and dressings are usually oil-in-water emulsions (o/w) which contain a between 10% and 80% fat. Mayonnaise is a well known example of a high fat product in this category. Due to high water content these formulations are extremely sensitive to oxidation and must always be protected by an antioxidant, which often includes a metal chelator like EDTA.
