Margarine and related spreads are water in oil emulsions (w/o), with a minimum of 20% water content. These days, margarine can have up to 60% water content, making it very sensitive to autoxidation. Margarine is usually stabilized only by citric acid, but also increasingly by mixed tocopherols.
