Chelators
Metal ions such as iron (Fe+) and copper (Cu+) can cause an initiation reaction starting the autoxidation of lipids.

These metal ions may be present in your production facility or in your raw materials, like iron from egg yolks or from potatoes during frying.

Chelators are materials with a specific molecular structure which enables them to trap metal ions, thereby preventing the formation of a radical which could cause autoxidation. This can significantly contribute to the stability of oils, fats or fat-containing products.
