Traditional antioxidant systems

Traditional antioxidant systems are synthetic compounds or blends dissolved in a suitable carrier. Our traditional antioxidant systems are sold under the brand name Antrancine. Our Antrancine range contains combinations of the four traditional antioxidants approved for use in human foodstuffs:

BHA (butylated hydroxy anisole)

The most popular traditional antioxidant. BHA (E320) is a powder highly soluble in oils and fats. Reasonably heat stable but fairly volatile, it tends to evaporate from the system when exposed to temperatures above 100°C for an extended period. BHA is also soluble in other liquids, like monopropylene glycol, so it can easily be combined with other antioxidants (eg. propyl gallate) or metal chelators (eg. citric acid).

BHT (butyl hydroxy toluene)
Not as effective as BHA, but more economical. BHT (E321) is also a powder – fine or crystalline – highly soluble in oils and fats. Not soluble in monopropylene glycol and volatile at temperature above 80°C. Still, BHT is a highly suitable antioxidant at lower temperatures. Easily be combined with BHA in an oil carrier.

Propyl gallate
Propyl gallate (E310) is one of the most widely used food antioxidants and is a component of many mixtures. Soluble in monopropylene glycol and easily combined with BHA and citric acid as a metal chelator. Propyl gallate is not soluble in oil. When in contact with iron or copper ions, a purple complex is formed which can result in discoloration of food products. Best used in combination with a metal chelator, such as citric acid.

TBHQ (tertiary butyl hydroquinone)
The strongest traditional antioxidant. Used effectively in oils and fats, particularly vegetable oils where other phenolic compounds are relatively ineffective. Soluble in monopropylene glycol and easily combined with other traditional antioxidants and metal chelators. TBHQ is not soluble in oil. The combination of TBHQ and citric acid is highly effective for stabilizing polyunsaturated oils.
